The Best Oatmeal Raisin Cookies

In my opinion these are the best oatmeal cookies I’ve ever had! It takes about a 30 minutes in total and makes about 36 cookies. Here’s the recipe below:

Ingredients:

Dry ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Wet ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup dark brown sugar (light brown also works), firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla extract

Add in’s:

  • 3 cups of old fashioned oats
  • 1 1/2 cups raisins (optional)

Directions:

  1. Preheat your oven to 350° Fahrenheit.
  2. Whisk together the dry ingredients in a medium bowl, and set aside.
  3. Combine wet ingredients in a large bowl and mix by hand or a hand mixer on low.
  4. Mix together the wet ingredients until fluffy and the color lightens.
  5. Stir in the dry mixture into the wet mixture until no flour is visible.
  6. (Over mixing can led to a tough cookie, so try to avoid that) Now add in the oats and raisins, stirring until they are evenly distributed throughout the mixture.
  7. Take about 2 tablespoons of cookie dough and roll it into a ball.
  8. Drop about 2 inches apart onto a baking sheet sprayed with nonstick cooking spray or lined with parchment paper.
  9. Bake for 12-14 minutes (on the center rack), until golden, but still relatively moist.
  10. Remove from oven; let cookies sit on the baking sheet for about 5 minutes or until cool. Enjoy!
